It is often used in sweet dishes like cheesecake (Cretan version), paired with honey for a delicious snack, or just accompanied with barley rusks or bread, as a snack. Another great characteristic of soft “Anthotyro” is its low-calorie count, therefore many people who seek a balanced diet, fall in love with it. On the other hand, the dry version has a solid texture and a very salty taste. It can be great for serving pasta, in a grained form, or adding taste to a salad, as rinds! The Cretan handmade pasta “skioufichta” are often served with grained white cheese “anthotyro” as a topping. You should try them!

Kefalotyri & Ksinomyzithra: the underdogs
“Kefalotyri” is similar to “Graviera” in taste and texture, but has a saltier and sharper flavor. It is often used in Greek dishes like “Saganaki”, which is a thick slice of cheese, breaded and fried on a pan. Some restaurants add on top of it sesame seeds and honey for extra points! Additionally, “Ksinomyzithra” is a tangy, crumbly cheese made from goat’s milk. It is often used in savory dishes like pasta or as a topping for grilled vegetables.
